Over the years I have always been on the lookout for easy, quick recipes that don’t make a bunch of dishes. And lo and behold, I end up finding one on the Martha Stewart website. I have used this recipe on a couple of occasions where I didn’t have much time and wanted a hearty, tasty, and easy meal. One pot, and all of it is cooked at the same time.

Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and vegetable broth in a large cast iron dutch oven, bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated, about 9 minutes.
Season to taste with salt and pepper, divide among 4 bowls, and garnish. Serve with oil and Parmesan (I omitted, as I’m trying to be somewhat healthy).
Also, please don’t mind the photo, although it looks a little blah the flavor in this dish is amazing; And I might of let it cook a little longer than needed. oops…
